A renovated winery for precision work
The Château de Cérons is Certified « High Environnemental Value 3 (HVE3)
Château de Cérons has a gravity-fed system on several levels in its winery which aliments both concrete and stainless-steel vats. The winery has been renovated and thermo-regulation put in place to enable the vinification of both red and white wines. There are also two barrel cellars.
Xavier is committed to bringing out the essential character of Cérons terroir and revealing the best qualities it has to offer: freshness of the fruit, fine minerality, elegant and soft tannins.
The Cérons appellation is an enclave in the Graves region. The Château de Cérons has the privilege of making sweet white Cérons, and also red and white Graves.
The Marquises of Calvimont initiated the building and developed cultural life in Château de Cérons in the XVIIth century. The vine plots producing Château Calvimont have always been part of Château de Cérons estate. Château Calvimont produces red and dry white wines.
This estate has always belonged to the family of Jean Perromat, the current owner. Xavier Perromat became tenant farmer there in 2012. Château du Mayne makes red and white Graves wines.
