Wine harvest

Grapes are hand picked  when best matured and carefully sorted on the plot.

 

Wine making

Unloading of the grapes poured directly into the press. Very slow pressing of the whole berries. decanting and fermenting in very small temperature controlled stainless steel vats.

Ageing

 Two years before bottling in our cellars.

Production

Average, 50 000 bottles

The predominance of sauvignon adds a caracteristic musky note.

Temperature-controlled fermentation in small vats preserves aromas.
